malimali-san served vegan food to Kaze


It’s December 2023 already, and Fujii Kaze has been active this year as well. His Asia Tour was heating up.
By the way, did you know that malimali-san, a cafe owner and food designer based in Bangkok, Thailand, provided vegan meals for Team Kaze during his concert in Bangkok in July? I really wanted to personally write a blog about this. She herself unveiled those things on Twitter(X) on July 3rd, 2023. It was the day after Kaze’s two-day Bangkok concert.
This is the story of the food that Kaze ate in Bangkok.

malimali-san served food to Team Kaze four times over two days, twice a day.

 malimali-san  I was responsible for 4 meals : lunch and dinner for 2 days. My menus are international because they (the team) are on tour, so I hope they feel they were really traveling 😀 Before the first meal, let’s do the COVID test. I feel so responsible for Je(Kaje) and his team’s health.

Day 1 Lunch: Chinese food, Dinner: European food.

I took them to China :D, but it was a little bit of Shantou food. Chinese veg stew are made earlier for more intense flavour (it’s the first time I made without mushroom) + Boiled peanut with soy sauce + Fried green. The tofu hamburgs were the highlighted.

Chaozhou Cuisine.
A local cuisine eaten mainly in Chaozhou and Shantou cities in China.

Also popular in Thailand, Singapore, Hong Kong, etc.
It is characterized by the use of dried seafood such as Surume, dried oysters, dried fish, and shark’s fin, which are boiled to extract their umami flavor.
Because fresh seafood is available, seafood dishes such as fish and crab are made by steaming, there is also a wide variety of fish paste products such as tsumire (fish ball) made from fish, squid, and shrimp paste.

Let’s go to Europe with Spaghetti with Ratatouille, the side Garden, and Minestrone soup. As well as the Chinese veg stew, the ratatouille was planned and cooked ahead for more flavours also.

Day 2 Lunch: Japanese food, Dinner: Middle Eastern food.

Maybe just get back to where they were from, Japan. I mixed the rice with Shiso + Hijiki and sesame to alter the rice flavour from day1. Fried veg with homemade teriyaki sauce + sauteed beansprout in sesame oil + Yasai tempura, and black miso soup with soy meal.

Day 2 : Dinner
Let’s go to the Middle East with Falafel. I also made Hummus and Tahini sauce from scratch (It takes time but sometimes your inspiration blows your laziness away). Falafel is also one of my most favourite Middle East menu so I’d like Kaje and the team to try also.

Snacks

 

malimali-san even prepared snacks. It couldn’t be better.

Maple glaze is a sweet topping made with powdered sugar, maple syrup, maple extract, milk, and salt.It is often used to decorate cakes, cupcakes, and other desserts.

 

Roti sai mai
A Thai snack consisting of a crepe-like roti made of flour and wrapped in a cotton candy coating called saimai.

 

Designing meal sketches is one of the skills she learned in college.

It’s a truly excellent story.

 

I come across various stories while supporting my favorite. For example, there is someone who bought the same clothing as Kaze, and another person who scored a front-row ticket to Kaze’s concert. However, the most enviable thing I ever heard was malimali-san’s vegan cooking story because Kaze ate the food that malimali-san painstakingly prepared.

Wow, such happiness exists in this world!
